Honey Mustard Sauce

  1. Melt butter in heavy medium saucepan over medium heat.
  2. Add shallots and garlic; saute until tender, about 2 minutes.
  3. Add clam juice, wine and mustard seeds.
  4. Boil until liquid is reduced by half, about 2 minutes.
  5. Add cream.
  6. Boil until liquid is reduced to 1 cup, about 3 minutes.
  7. Mix in Dijon mustard and honey.
  8. Season with salt and pepper.
  9. (Can be prepared 1 day ahead.
  10. Cover and refrigerate.
  11. Before using, rewarm over low heat.)
