Green Enchilada Pie Recipe
- 2 pound grnd beef (I prefer 2 1/2 c. (approx.) boiled cut up chicken meat
- 1 med. onion, minced
- 1 can green chili peppers
- 1 c. taco sauce
- 1 can enchilada sauce (mild, warm is definitely for the "Big Boys")
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 pkg. tortillas
- 2 c. grated cheese
- (I add in 2 tbsp. chili pwdr too!)
- Brown beef and onion together.
- Add in chicken and mushroom soups, sauces and green chili peppers.
- Heat thoroughly.
- Cut tortillas in fourths, lightly butter one side and layer in a greased 9 x 13 inch pan.
- Start with a layer of tortillas, layer of meat, ending with cheese.
- Heat in oven at 350 degrees for 20-30 min.
