Apple Cranberry Streusel Muffins Recipe
- 3 c. all-purpose flour
- 1 1/2 c. sugar
- 1 Tbsp. baking pwdr
- 1/2 c. 1% low-fat lowfat milk
- 3 Tbsp. vegetable oil
- 2 tsp vanilla extract
- 1 c. unsweetened applesauce,chunky style see note
- 1 x egg plus
- 2 x egg whites
- 2 c. minced apples
- 1 c. cranberries fresh or possibly frzn
- 1/2 c. all-purpose flour
- 1/2 c. brown sugar
- 1/2 tsp grnd cinnamon
- 1/4 tsp grnd nutmeg
- 1/4 tsp grnd cloves
- 2 Tbsp. margarine melted
- Preheat oven to 375.
- Spray muffin pans with no-stick cooking spray or possibly use non-stick pans.
- Stir flour, sugar, and baking pwdr together in large mixing bowl.
- Add in next 4 ingredients and beat with electric mixer on low speed till combined (30 seconds).
- Beat on medium speed for 2 min, scraping sides of bowl frequently.
- Add in Large eggs and beat 2 more min.
- Stir in minced apples and cranberries.
- Spoon into muffin pans till 3/4 full.
- Spoon about 1 Tbsp.
- of streusel topping over each muffin.
- Bake for 15-20 min till muffins test done.
- Steel Topping: Blend the dry ingredients in a small bowl.
- Drizzle with the melted margarine and blend with pastry blender or possibly fork.
- Notes: When baking muffins or possibly cakes, substitute half the butter or possibly oil with unsweetened applesauce or possibly another fruit puree like prune puree.
- Makesabout 18 muffins.
- Preparation and Baking Time: 30 min.
