Toasted Reuben
- 8 thin slices deli corned beef
- 2 slice swiss cheese
- 2 slice marble rye bread
- 2 tbsp 1000 island dressing
- 1 tbsp dijon mustard
- 1/2 cup sauerkraut
- 1/2 cup chicken or veggie stock
- Heat stock in small saucepan.
- Add sauerkraut.
- Reduce until liquid is evaporated.
- Finish on panini press or 400 oven for approximately 4 minutes or until bread is crispy and cheese is melted.
- Variations; Turkey, avocado, bacon, gruyere, fresh corned beef, different mustards
