Saskatoon Jam

  1. MEASURE prepared fruit into a large saucepan.
  2. Add lemon juice.
  3. Heat gently until juice starts to flow.
  4. Simmer, covered, 15 minutes.
  5. ADD sugar to fruit and mix well.
  6. PLACE saucepan over high heat, bring to a full rolling boil and boil hard 1 minute, stirring constantly.
  7. Remove from heat.
  8. IMMEDIATELY stir in liquid fruit pectin.
  9. STIR and skim for 5 minutes to prevent floating fruit.
  10. POUR quickly into warm sterilized jars filling up to 1/4 inch (0.5 cm) from rim.
  11. SEAL while hot with warm sterilized 2-piece lids with new centers.
