Saskatoon Jam
- 4 1/2 cups crushed Saskatoon berries (about 7 cups ripe Saskatoon berries)
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 7 cups sugar
- 2 pouches Certo Liquid Pectin
- MEASURE prepared fruit into a large saucepan.
- Add lemon juice.
- Heat gently until juice starts to flow.
- Simmer, covered, 15 minutes.
- ADD sugar to fruit and mix well.
- PLACE saucepan over high heat, bring to a full rolling boil and boil hard 1 minute, stirring constantly.
- Remove from heat.
- IMMEDIATELY stir in liquid fruit pectin.
- STIR and skim for 5 minutes to prevent floating fruit.
- POUR quickly into warm sterilized jars filling up to 1/4 inch (0.5 cm) from rim.
- SEAL while hot with warm sterilized 2-piece lids with new centers.
