Loaded Potato and Chicken Casserole
- 4 each russet potatoes diced (small)
- 1 lb chicken diced (medium)
- 1 lb bacon cooked and crumbled
- 1 1/2 cup shredded cheese
- 1/2 cup heavy cream
- 4 oz cream cheese
- 4 tbsp butter
- preheat oven 350
- Melt butter, whipping cream and butter on stove
- layer half of the potaoes on the bottom in an 8x8 casserole dish
- place half the chicken on top of the potatoes
- salt and pepper
- sprinkle half of the bacon
- sprinkle half of the cheese
- repeat all layers
- Pour cream cheese, whipping cream and butter over top
- bake covered for 90 minutes
- uncover foil and return to oven for 30 minutes
