White Cheddar-Chive Pimiento Cheese
- 12 ounces sharp white cheddar cheese
- 13 cup mayonnaise
- 2 tablespoons mayonnaise
- 4 ounces diced pimentos, drained and rinsed
- 13 cup fresh chives, finely sliced
- 1 tablespoon Dijon mustard
- 12 teaspoon Worcestershire sauce
- 14 teaspoon ground red pepper
- 14 teaspoon black pepper
- Grate half of cheese on the large holes of a box grater, and the other half on the small holes.
- Stir together all ingredients except the cheese, then blend in the cheese.
- Let stand 15 minute.
