Winter Greens With Carrots, Balsamic, and Brown Rice

  1. Heat oil in a large skillet over medium heat.
  2. Add onion and carrots.
  3. Saute until onion is soft and golden.
  4. Add greens.
  5. Saute until wilted (10-15 min).
  6. Add balsamic vinegar and stir 2 minutes more.
  7. Add cooked rice.
  8. Mix vegetables throughout.
  9. Season with salt and pepper, and add more balsamic if desired.
  10. Sprinkle with crumbled feta if desired.
