Lobster Newburg Recipe
- 1/2 c. butter
- 1-2 teaspoon paprika
- 1 pound cut up lobster meat
- 1/2 c. sherry
- 1 c. light cream
- 3 egg yolks
- 1 teaspoon brandy
- Heat butter in skillet over low heat.
- Add in paprika and lobster meat.
- Heat till meat is pink.
- Add in sherry and cook till wine is reduced.
- Beat together egg yolks and cream and stir into skillet.
- Sauce shouldn't boil.
- Over cooked egg yolks will sauce mix to curdle.
- Stir in brandy and serve on toast points or possibly prepared frzn pastry shells.
- Makes about 6 servings.
