Cook's Country Bacon Couscous

  1. In medium sized saute pan, cook the bacon until crisp.
  2. Remove with slotted spoon to paper towel lined plate.
  3. In same pan with reserved 1 tablespoons fat, saute the shallots for 3 minutes on medium heat.
  4. Add broth and bring to a simmer.
  5. Stir in the couscous and cover with lid.
  6. remove from heat and let stand for 5 minutes.
  7. Fluff with fork and then add the parsley, cider vinegar and bacon.
  8. Taste for seasonings.
