Beef Jerky #2

  1. Combine the spices in a dish.
  2. Cut the meat into strips less than 1/4 of an inch thick.
  3. Remove ALL fat.
  4. Sprinkle one side with the combined seasonings and beat with a meat hammer.
  5. Turn and repeat the seasoning and beating.
  6. Place the strips on a cookie sheet or other flat pan.
  7. Place in a 120 F oven for 4 hrs.
  8. Turn and put back for another 4 hrs.
  9. Keep the oven door propped open for the entire time to allow the moisture to escape.
  10. With a gas oven, the pilot light may be enough to provide the heat.
  11. Store in a plastic bag.
  12. Also may be stored in a pillowcase.
  13. Do not store in a paper bag.
