Mango Dip

  1. In saucepan, bring mango, water and sugar to a boil.
  2. Reduce heat and simmer until reduced by half.
  3. Add mint and vinegar.
  4. Transfer to a blender and puree until smooth.
  5. Fold whipped cream, one third at a time, into mango puree.
  6. Refrigerate 1 hour before serving.
