Mango Dip
- 1 cup chopped mango
- 1 cup water
- 1 tablespoon sugar
- 1 teaspoon chopped of fresh mint
- 12 teaspoon apple cider vinegar
- 1 cup whipped cream
- In saucepan, bring mango, water and sugar to a boil.
- Reduce heat and simmer until reduced by half.
- Add mint and vinegar.
- Transfer to a blender and puree until smooth.
- Fold whipped cream, one third at a time, into mango puree.
- Refrigerate 1 hour before serving.
