Porter Chili
- 2 lb boneless pot roast, cut into 1" cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 clove minced garlic
- 1 large bell pepper, diced
- 1 jalapeno pepper, diced
- 3 tbsp chili powder
- 2 tbsp smoked paprika
- 1 tbsp red pepper flakes
- 2 can fire roasted tomatoes
- 1 can black beans, drained and rinsed
- 2 tbsp tomato paste
- 12 porter or similar dark beer
- In large stock pot or dutch oven, heat oil over medium-high heat and add meat.
- Cook for about 2 minutes then add onions and continue to cook until meat is browned and onions or golden.
- Add garlic, peppers, chili powder, paprika, and pepper flakes.
- Stir until spices become fragrant.
- Add the rest of the remaining ingredients and stir to combine.
- Cover and simmer over low heat for at least 1 hour, until the beef is fully tender.
