Yeast-Raised Irish Soda Bread

  1. Set aside 1 cup flour. In large bowl, mix remaining flour, undissolved yeast, sugar, salt and baking soda. Heat water, buttermilk and butter until hot to touch, 125u0b0 to 130u0b0.
  2. Stir into dry mixture. Mix raisins and enough reserved flour to make soft dough. Cover bowl; let rest 10 minutes.
  3. Knead 10 times on lightly floured surface. Form 5 to 6 inch diameter ball. Place on greased baking sheet. Cover; let rise in warm, draft-free place until doubled in size, about 1 hour. Sprinkle dough lightly with 1 tablespoon flour.
  4. With sharp knife, make 1/8 inch deep cross in top of dough.
  5. Bake at 350u0b0 for 30 minutes or until done. Remove from baking sheet and cool on wire rack.
