Layered Cornbread Meatloaf

  1. Meatloaf: Mix 3 cups stuffing (or 1-1/2 cups stuffing for trial recipe) with remaining ingredients.
  2. Press 10 oz.
  3. meat mixture onto bottom of each of 4 (9x5-inch) loaf pans (or onto bottom of each of 2 loaf pans for trial recipe); top each with 1/2 cup of the remaining stuffing.
  4. Repeat layers.
  5. Cover ingredients in each pan with 10 oz.
  6. of the remaining meat mixture.
  7. Bake in 350 degrees F standard oven 40 to 45 min.
  8. or until done (165 degrees F).
  9. Cut each loaf into 8 (1-inch thick) slices to serve.
  10. Sauce: Cook ingredients in saucepan on low heat until heated through, stirring occasionally.
  11. For each serving: Spoon 2 Tbsp.
  12. Sauce into ramekin.
  13. Serve with 1 meatloaf slice.
