Mississippi Seafood Gumbo Recipe

  1. Heat oil in large pot.
  2. Add in flour and brown slowly till a dark roux has been made.
  3. Add in 1 c. of water to thin roux.
  4. Add in onion, celery, pepper and garlic; brown.
  5. Add in okra.
  6. Continue to brown mix very slowly for about an hour.
  7. Add in file, oregano, salt, pepper, Tabasco and tomatoes.
  8. Cook for 4 hrs.
  9. Add in shrimp and crab meat, cook slowly for 2 hrs.
  10. Serve over rice in large bowl.
  11. Serves 6-8.
  12. May be prepared several days ahead.
  13. Freezes well.
