Southwestern Sloppy Toms
- 1 14 lbs ground turkey
- 1 cup onion, minced
- 1 cup chipotle salsa or 1 cup any salsa
- 1 (4 1/2 ounce) can diced green chilies (with juices)
- 5 loaves cornbread, individual
- additional salsa (to garnish) (optional)
- In a large skillet cook turkey and onions over medium heat until turkey is no longer pink and onions are softened.
- Break up turkey with wooden spoon as it cooks.
- Drain off any liquid.
- Stir in salsa and chilies and heat to simmering.
- Reduce heat to low and cook 3 to 5 minutes, stirring occasionally.
- Meanwhile, heat cornbread and cut in half lengthwise.
- Spoon turkey atop and form sandwich.
- Garnish with additional salsa, if desired.
