Saucy Greek Chicken Skillet
- 4 small boneless skinless chicken breasts (1 lb.)
- 1 Tbsp. oil
- 1/4 cup KRAFT Greek Vinaigrette Dressing
- 1/4 cup fat-free reduced-sodium chicken broth
- 1 onion, chopped Safeway 1 lb For $1.49 thru 02/09
- 1 tsp. dried thyme leaves
- 1 red pepper, cut into strips
- 1/4 cup ATHENOS Traditional Crumbled Feta Cheese
- 12 pitted black olives
- Cook chicken in hot oil in large covered skillet on medium-high heat 4 min.
- on each side or until each breast is evenly browned on both sides.
- Mix dressing, broth, onions and thyme until blended; pour over chicken.
- Bring just to boil; simmer on medium-low heat 3 min.
- or until chicken is done (165 degrees F).
- Add red peppers, feta and olives; mix well.
- Cook 2 to 4 min.
- or until peppers are crisp-tender, stirring occasionally.
