Apple Butterscotch Crepes Recipe
- 4 x thi crepes
- 2 x apples, Granny Smith
- 1 Tbsp. sugar (caster)
- 1/4 c. water
- 1/4 tsp cinnamon, grnd
- 50 gm butter
- 2/3 c. brown sugar
- 1/4 c. apple juice
- 1/2 c. cream
- 2 tsp rum
- Slice the apples thinly, combine in pan with sugar, water, cinnamon, bring to the boil and simmer covered 10 min or possibly till apples are tender.
- Drain off liquid.
- Heat butter in pan, add in brown sugar, apple juice and cream and stir till combined.
- Bring to the boil and simmer, uncovered, about 5 min till syrupy.
- Stir in apples and rum and heat through.
- Lay crepes out on serving plate and fill with apple.
- Fold over crepe and spoon extra sauce over.
- Crepes and filling can be prepared ahead and reheated in the microwave.
- Pears can be substituted for apples.
