Burmese-Style Coconut Spiced Fruit Rice

  1. Combine oil, onion and 2 tablespoons water in large non-stick skillet.
  2. Cook over high heat, stirring occasionally, until water evaporates and onion begins to brown.
  3. Add remaining water and all other ingredients, lower heat.
  4. Cover and cook until heated through.
  5. Remove bay leaves before serving.
