Salmon with Savory Blueberry Sauce

  1. Preheat the grill on medium- high heat.
  2. In a medium saucepan, heat the olive oil over medium heat.
  3. Add the shallots and saute for 3 minutes.
  4. Add the garlic and cook for another minute.
  5. Add the blueberries and water.
  6. Stir and cook for 2-3 minutes.
  7. Add the vinegar, thyme and salt and cook another minute to combine.
  8. Set aside.
  9. Spray the preheated grill with grill spray.
  10. Grill the salmon for 4-5 minutes per side, until just opaque in the center.
  11. Remove it from the grill to a clean plate.
  12. Combine the spinach and broth in a saute pan over medium heat and cook for 1 minute until just wilted.
  13. Spoon the spinach on each of 4 plates.
  14. Top with grilled salmon and blueberry sauce.
  15. Serve warm.
