Frosted Chocolate Almond Cookies

  1. Heat oven to 375F.
  2. Combine sugar and butter in bowl.
  3. Beat at medium speed, scraping bowl often, until creamy.
  4. Add egg and vanilla; continue beating until well mixed.
  5. Add flour and baking powder; beat at low speed, scraping bowl often, until well mixed.
  6. Add cooled chocolate; continue beating until well mixed.
  7. Stir in almonds until well mixed.
  8. Shape dough into 1-inch balls.
  9. Place 1 inch apart onto ungreased cookie sheets.
  10. Flatten with bottom of glass dipped in sugar.
  11. Bake 7-9 minutes or until edges are firm.
  12. Cool completely.
  13. Combine powdered sugar, butter and almond extract in bowl.
  14. Beat at low speed, adding enough half & half for desired frosting consistency.
  15. Spread about 1/2 teaspoon frosting over each cookie.
  16. Let stand until frosting is completely set.
