Spiced Turkey and Lettuce Wraps
- 1/2 cup water
- 1/2 cup brown rice instant
- 1 1/2 teaspoons sesame oil or to taste
- 1 pound turkey 93%-lean, ground
- 1 tablespoon ginger freshly minced
- 1 large sweet red bell peppers finely diced
- 8 ounces water chestnuts 1 can, rinsed and chopped
- 1/2 cup chicken broth, low salt
- 1 1/2 tablespoons hoisin sauce or to taste
- 1 teaspoon chinese five spice powder
- 1/4 teaspoon salt or to taste
- 2 heads boston lettuce leaves separated
- 1/2 cup mixed herbs such as cilantro, basil, mint and/or chives, freshly chopped
- 1 large carrots shredded
- Bring water to a boil in a small saucepan.
- Stir in instant brown rice, reduce heat to low, cover and cook for 5 to 6 minutes.
- Remove from the heat.
- Meanwhile, heat oil in a large nonstick pan over medium-high heat.
- Stir in turkey and ginger, cook, crumbling with a wooden spoon, until the turkey is cooked through, 5 to 8 minutes.
- Add the cooked rice, red bell pepper, water chestnuts, broth, hoisin sauce, five spice powder and salt to taste, cook and stir often until heated through, 1 to 2 minutes.
- To serve:
- Add portions of the turkey mixture into lettuce leaves, put herbs and carrot on top.
- Roll into wraps and serve warm.
