Jicama Salad
- 1 large Jicama, peeled and diced
- 1 each Sweet red bell pepper
- 1/2 each Red onion, sliced thin
- 1 can Mandarin oranges, drained
- 1/2 cup Fresh cilantro, chopped
- 2 each Limes or lemons, juiced
- 2 tbsp Olive oil
- 1/2 tsp Each salt and pepper
- 1 pinch Cheyenne pepper or red pepper flakes (optional)
- Mix the dressing first so you can toss the jicama in it after chopping (this will prevent the jicama from oxidizing ...turning brown like an apple does when cut).
- Chop all veggies and mix well in dressing.
- Refrigerate for a few hours before serving for best flavor.
- Allowing the citrus marinade to infuse into the salad.
