Blushing Apples

  1. Combine dry gelatin mix and cinnamon in 3- to 4-qt.
  2. saucepan.
  3. Add water.
  4. Bring to boil on medium-high heat, stirring frequently until gelatin is completely dissolved.
  5. Peel and core apples.
  6. Add to gelatin mixture in saucepan; partially cover saucepan with lid.
  7. Return to boil.
  8. Reduce heat to medium-low; simmer 10 to 15 min.
  9. or just until apples are fork tender, gently turning apples every 5 min.
  10. Remove apples from liquid.
  11. Serve apples warm.
  12. Or, cool and store in tightly covered container in refrigerator at least 1 hour or overnight.
  13. Serve each apple topped with 2 Tbsp.
  14. of the whipped topping.
  15. Garnish with fresh mint, if desired.
