Orange Vinaigrette
- 1 cup champagne vinegar
- 3 tablespoons fresh squeezed orange juice
- 2 teaspoons grated orange rind
- salt & freshly ground black pepper
- 12 cup olive oil
- Whisk together the vinegar, orange juice, zest, and a good pinch of salt and pepper in mixing bowl.
- While whisking, slowly add in the olive oil at a drizzle.
- Adjust seasoning to taste.
- The vinaigrette will keep for 1-2 weeks in the refrigerator.
- Whisk before use if separated.
