Orchard-Fresh Baked Apple Pies

  1. Preheat oven to 350F.
  2. Slice 1/2-inch off tops of 4 apples.
  3. Scoop out centers of apples, leaving 1/2-inch shell.
  4. Place scooped-out flesh in bowl.
  5. Peel and thinly slice remaining 2 apples.
  6. Add to bowl, and toss with brown sugar, cornstarch, 1/4 tsp.
  7. cinnamon, ginger, allspice, and 1 Tbs.
  8. water.
  9. Stuff apples with filling; place on baking sheet.
  10. Place puff pastry circles on top of apples.
  11. Brush with soymilk, and flute edges with fork.
  12. Combine sugar and 1/4 tsp.
  13. cinnamon in bowl, and sprinkle over pastry tops.
  14. Bake 40 to 45 minutes, or until apples are tender.
