Raspberry Meringue Bars

  1. Preheat oven to 325F
  2. Cream together butter, almond paste, 1 egg, and brown sugar.
  3. Mix flour and salt until crumbly.
  4. Press dough into 9x12 baking dish.
  5. Bake for 20 minutes.
  6. Remove from oven.
  7. Spread with jam.
  8. Beat egg whites until foamy.
  9. Gradually add sugar and beat until stiff peaks form.
  10. Fold in coconut.
  11. Spread meringue over jam.
  12. Bake another 20 minutes.
  13. Cool before cutting.
