Chocolate Mint Freeze

  1. In large bowl, whisk milk and pudding mix for 2 minutes, let stand for two minutes or until soft set.
  2. Stir in chocolate chips.
  3. In small mixing bowl, beat cream until it begins to thicken.
  4. Add peppermint extract, beat until soft peaks form.
  5. Fold into pudding.
  6. Transfer to ungreased 8 inch square dish.
  7. Cover and freeze for two hours or until firm.
  8. Remove from freezer 15 minutes prior to serving and cut into squares.
