Spiced Red Wine Fruit Soup with Candied Orange
- 1 small pineapple
- 8 small oranges or tangerines, thin-skinned, seedless
- 1 1/4 cups sugar approximately
- 1/2 each vanilla bean split
- 1 each anise pods star
- 2 tablespoons liqueur triple sec, grand marnier, cointreau or other orange flavor
- 3 medium pears such as bartlett
- 4 cups red wine dry
- 12 each mint leaves or 2 teaspoons high-quality peppermint tea leaves
- 1 each cinnamon sticks
- 1 teaspoon black peppercorns whole
- 1/2 teaspoon cardamom seeds
- 1 tablespoon cornstarch PLUS 1 teaspoon
- 1/2 cup creme fraiche
- 1/4 cup heavy whipping cream (approximately)
- 1 x mint leaves fresh, for garnish
- Using a large sharp knife, trim off the top and bottom of the pineapple and slice off the skin.
