Strawberry Rhapsody Jam
- 3 cups crushed strawberries
- 1 cup crushed raspberries
- 1 cup unsweetened apple juice or 1 cup cranberry juice
- bernardin no-sugar needed fruit pectin (1 package)
- artificial sweetener (1 1/2 cups granulated sugar or 1 1/2 cups Splenda sugar substitute) (optional)
- Preheat mason jars and Snap lids.
- Combine strawberries and raspberries and fruit pectin in a large deep stainless steel saucepan.
- Whisk in fruit pectin.
- If using sweetener, measure Splenda or sugar and set aside.
- Stirring constantly, bring fruit mixture to a boil over high heat.
- If using, add sweetener or sugar, and return mixture to a boil, stirring frequently.
- Boil 3 minutes.
- Remove form heat.
- Skim foam.
- Ladle into hot jars.
