Mary's Banana Cake
- 1 cup butter
- 2 cups sugar
- 2 eggs
- 3 cups flour
- 2 teaspoons baking soda
- 1 cup sweetened condensed milk
- 1 12 cups bananas, mashed
- 1 cup sugar
- 12 teaspoon baking soda
- 13 cup buttermilk
- 12 cup butter
- 1 tablespoon light corn syrup
- 1 teaspoon banana extract
- 8 ounces cream cheese
- 1 lb powdered sugar
- 1 teaspoon vanilla
- 1 tablespoon milk (optional)
- 1 cup toasted chopped pecans
- cream butter and sugar.
- add eggs.
- beat well.
- add dry ingredients and condensed.
- milk, alternately.
- add mashed bananas.
- dough will be stiff.
- spread into 3 greased and floured cake pans.
- bake at 350 for 30 minutes.
- combine baking soda, sugar, buttermilk , butter and corn syrup in a pan slowly bring to a boil and cook for 4 minutes, stirring often.
- remove from heat and stir in banana extract.
- when cakes are done, remove from oven, spread glaze over cakes while thwy are still in the baking pans.
- cool for 15 minute remove from pans.
- cool completely on wire racks.
- mix cream cheese and powdered sugar.
- add milk if mixture is too thick.
- add vanilla.
- frost layers and sprinkle each with pecans.
- do not frost sides.
- allow the frosting to drip partially down the sides.
- this cake resemb.les a torte.
