Spinach and Egg Cheesy Pies

  1. Push the softened tortillas into 6 x 1 cup greased Texan muffin pans.
  2. Top each with a Single*.
  3. Heat oil in a frying pan and saute the onion and garlic.
  4. Add spinach and cook until wilted.
  5. Divide onion mixture between the 6 cups.
  6. Season.
  7. Crack an egg into each cup and sprinkle with chives.
  8. Bake at 180C for 20-25 minutes until set.
  9. Serve.
  10. NOTE: Spinach and egg filling can be substituted with chilli con carne.
