Spinach and Egg Cheesy Pies
- 6 fajita tortillas, softened in microwave on HIGH for 30 seconds
- 6 KRAFT Singles
- 2 teaspoons oil
- 1 red onion, finely chopped
- 1 clove garlic, crushed
- salt and pepper, to taste
- 100g baby spinach leaves
- 6 small eggs
- 2 tablespoons finely chopped chives
- Push the softened tortillas into 6 x 1 cup greased Texan muffin pans.
- Top each with a Single*.
- Heat oil in a frying pan and saute the onion and garlic.
- Add spinach and cook until wilted.
- Divide onion mixture between the 6 cups.
- Season.
- Crack an egg into each cup and sprinkle with chives.
- Bake at 180C for 20-25 minutes until set.
- Serve.
- NOTE: Spinach and egg filling can be substituted with chilli con carne.
