Chicken, Broccoli & Pinto Bean Skillet

  1. Cook bacon in large nonstick skillet on medium-high heat until completely browned.
  2. Remove from skillet; set aside.
  3. Add chicken to skillet; cook 2 to 3 min.
  4. or until cooked through, stirring constantly.
  5. Remove from skillet; set aside.
  6. Add onions to skillet; cook 3 to 4 min.
  7. until crisp-tender.
  8. Add broccoli, bell peppers, beans and crushed red pepper; cover.
  9. Cook 5 min.
  10. until vegetables are tender.
  11. Combine soy sauce and cornstarch in small bowl; add to skillet with chicken.
  12. Bring to boil; cook 1 min., stirring constantly.
  13. Stir in cooked bacon and peanuts.
  14. Serve over hot cooked rice.
