Barbecued whole spiced cauliflower recipe
- 1 cauliflower
- 4 cloves of garlic, finely grated
- 1 tbsp freshly grated ginger, finely grated
- 1 tsp smoked paprika
- 1 lemon, juice only
- 125 ml (4.4fl oz) Greek yoghurt
- 1 small handful parsley, chopped
- Remove the outer leaves of the cauliflower.
- Place in a large pan, cover with boiling water and a little seasoning, and then simmer for about 7-10 minutes, until almost cooked but still firm.
- Drain.
- Combine the garlic, ginger, smoked paprika, lemon juice and yoghurt with a little seasoning.
- Use 1 tsp of the yoghurt mixture to rub over the cauliflower, setting the rest aside.
- Wrap the cauliflower in tin foil and cook on a preheated barbecue for 10 minutes, rotating until cooked through.
- Serve with the reserved yogurt and garnish with the chopped parsley.
