Barbecued whole spiced cauliflower recipe

  1. Remove the outer leaves of the cauliflower.
  2. Place in a large pan, cover with boiling water and a little seasoning, and then simmer for about 7-10 minutes, until almost cooked but still firm.
  3. Drain.
  4. Combine the garlic, ginger, smoked paprika, lemon juice and yoghurt with a little seasoning.
  5. Use 1 tsp of the yoghurt mixture to rub over the cauliflower, setting the rest aside.
  6. Wrap the cauliflower in tin foil and cook on a preheated barbecue for 10 minutes, rotating until cooked through.
  7. Serve with the reserved yogurt and garnish with the chopped parsley.
