M.L.'S French Onion Soup Recipe
- 4 tbsp. butter
- 2 tbsp. oil
- 6 lg. onions (Bermuda and 3 yellow) firmly sliced
- Salt and pepper
- 1 teaspoon flour
- 1/2 teaspoon French Dijon mustard
- 1/2 c. white wine
- 1/2 can beer (the other 1/2 is for you!)
- 2 1/2 c. grated Swiss cheese
- French bread, sliced
- 2 1/2 to 3 1/2 c. beef bouillon
- Heat butter and oil in frying pan.
- Add in onions, salt, and pepper.
- Saute/fry slowly over a low fire till onions are very brown (20-30 min).
- Add in flour and mustard and stir well, till smooth.
- Continue stirring while adding the wine, beer, and stock.
- Bring slowly to a boil.
- Draw aside and simmer 15 min.
- Put thick slices of French bread into individual casserole dishes, add in soup and sprinkle with cheese and brown quickly under the broiler (serves 4).
- If made day ahead, don't simmer last 15 min.
