Rotini And Vegetable With Lemon Cheese Sauce

  1. Cook rotini according to package directions.
  2. Drain.
  3. Cook carrots and onion in butter in frypan over medium heat.
  4. Add zucchini, broccoli and 1/4 cup broth.
  5. Cover, reduce heat and simmer 5 minutes or until vegetables are tender.
  6. Remove vegetables and set aside.
  7. Stir IN remaining broth, cream cheese and oregano.
  8. Whisk until smooth and slightly thickened.
  9. Bring to boil, simmer over low heat, until heated through, stirring occasionally.
  10. Toss with cooked pasta, vegetables and lemon peel.
