Tofu & Sweet Pepper Scramble

  1. Heat oil over medium heat in nonstick skillet.
  2. Add onion and pepper; saute 5 min.
  3. Add tofu and salsa, chopping the tofu into the vegetables as you stir.
  4. Break up soy cheese into the pan, mixing well to melt cheese evenly throughout mixture.
  5. Divide into 4 equal servings.
  6. Spread 1 tsp.
  7. margarine on each slice of toast; serve each person 2 slices.
  8. Serve each person an 8 fl oz glass of orange juice with the meal.
