Tofu & Sweet Pepper Scramble
- 1 Tbsp. canola oil
- 1 medium red onion, chopped
- 1 medium green pepper, chopped
- 2 medium red peppers, chopped
- 16 oz. firm or extra firm lite silken tofu
- 1-1/2 cups TACO BELL HOME ORIGINALS Salsa
- 8 slices
- 8 slices whole wheat bread, toasted
- 8 tsp. trans fat free canola-based soft margarine
- 32 fl oz (4 cups) orange juice
- Heat oil over medium heat in nonstick skillet.
- Add onion and pepper; saute 5 min.
- Add tofu and salsa, chopping the tofu into the vegetables as you stir.
- Break up soy cheese into the pan, mixing well to melt cheese evenly throughout mixture.
- Divide into 4 equal servings.
- Spread 1 tsp.
- margarine on each slice of toast; serve each person 2 slices.
- Serve each person an 8 fl oz glass of orange juice with the meal.
