Tapenade and Goat Cheese Water Crackers
- 150g pitted black olives (200g jar, drained)
- 6 anchovy fillets
- 1 tablespoon capers
- 1 clove garlic, crushed
- 2 tablespoons olive oil
- 1 teaspoon lemon juice Safeway 4 ct For $5.00 thru 02/09
- pepper, to taste
- 50g soft goat cheese
- 125g CAPTAIN'S TABLE* Water Crackers
- Combine olives, anchovy fillets, capers and garlic in a food processor until smooth.
- Add the olive oil and lemon juice slowly to blend.
- Season with pepper.
- Serve on crackers with a slice of goat's cheese.
