  1. First is to prepare your vegetables.
  2. Chop your celery, pepper and onion.
  3. Then in a large deep pan, saute your vegetables in olive oil.
  4. After the vegetables are slightly soft 3-4 minutes, add the turkey and cook until brown.
  5. Break up the meat as it cooks.
  6. Add all the tomato ingredients, seasoning, herbs, sugar, worscestershire and cook for 30-40 minutes.
  7. The sauce will get nice and thick.
  8. Now make the corn bread as the Sloppy Joes cook.
  9. Make the corn bread according to directions, Add the green chilis, chili powder, cumin and cheese.
  10. Mix and put in a 9x9 square pan.
  11. I like to line mine with parchment paper so it doesnt stick, but that is optional.
  12. Bake according to directions and until you can insert a knife in the center and it comes out clean.
  13. Let the cornbread slightly cool.
  14. Slice a nice size piece and then slice in half to make like an open sandwich.
  15. Top with the sloppy joe mix.
  16. Garnish with cheese and scallions.
  17. Serve with your Mexican coleslaw and you have a perfect dinner.
