Creamy Squash Casserole Recipe

  1. Wash and slice squash into 1/4 inch slices.
  2. Cook 3 to 4 min in water and salt till tender.
  3. Drain.
  4. Chop onions.
  5. Mix onion, cream of chicken soup, lowfat sour cream and water chestnuts.
  6. Add in squash.
  7. Heat 6 Tbsp.
  8. butter and mix stuffing in.
  9. Spread all but 1 c. of stuffing mix into 9 x 13 baking dish.
  10. Cover with squash mix.
  11. Sprinkle remaining stuffing around edge.
  12. Dot top of casserole with remaining butter.
  13. Bake for 30 min in 350 degree oven.
  14. Makes 8 servings.
