Creamy Squash Casserole Recipe
- 1 1/2 pound sm. yellow squash
- water
- 1 teaspoon salt
- 2 med. onions
- 1 (10 3/4 ounce.) undiluted cream of chicken soup
- 8 ounce. lowfat sour cream
- 8 ounce. can sliced water chestnuts
- 1 stick butter
- 2 c. stuffing mix (about 1/2 of 8 ounce. pkg.)
- Wash and slice squash into 1/4 inch slices.
- Cook 3 to 4 min in water and salt till tender.
- Drain.
- Chop onions.
- Mix onion, cream of chicken soup, lowfat sour cream and water chestnuts.
- Add in squash.
- Heat 6 Tbsp.
- butter and mix stuffing in.
- Spread all but 1 c. of stuffing mix into 9 x 13 baking dish.
- Cover with squash mix.
- Sprinkle remaining stuffing around edge.
- Dot top of casserole with remaining butter.
- Bake for 30 min in 350 degree oven.
- Makes 8 servings.
