AMIEs FRIED ARTICHOKEs

  1. Fill a large bowl with cold water.
  2. Add the lemon juice.
  3. Set aside.
  4. Peel the stems of the artichokes and remove the dark, tough outer leaves, exposing the light tender one.
  5. Trim the tops and scoop out the choke.
  6. Open out gently the outside leaves, place in the lemon water and leave to soak for 10 minutes.
  7. Dry the artichokes using the paper towel.
  8. Gently open up the leaves and sprinkle salt and pepper inside.
  9. Half fill a large heavy- based saucepan with oil for deep-frying.
  10. Heat the oil to 180AsC (350AsF) or until a piece of bread browns in 15 seconds.
  11. Fry the artichokes for 20 minutes, turning occasionally until crisp and become golden brown.
  12. Remove using slotted spoon and drain in paper towel.
  13. Season with salt.
  14. Serve hot, share and enjoy the deliciousness!
