AMIEs FRIED ARTICHOKEs
- 8 large globe artichokes
- 1 juice of 1 lemon
- 1 frying cooking oil
- 1 salt and fresh ground pepper, to taste
- Fill a large bowl with cold water.
- Add the lemon juice.
- Set aside.
- Peel the stems of the artichokes and remove the dark, tough outer leaves, exposing the light tender one.
- Trim the tops and scoop out the choke.
- Open out gently the outside leaves, place in the lemon water and leave to soak for 10 minutes.
- Dry the artichokes using the paper towel.
- Gently open up the leaves and sprinkle salt and pepper inside.
- Half fill a large heavy- based saucepan with oil for deep-frying.
- Heat the oil to 180AsC (350AsF) or until a piece of bread browns in 15 seconds.
- Fry the artichokes for 20 minutes, turning occasionally until crisp and become golden brown.
- Remove using slotted spoon and drain in paper towel.
- Season with salt.
- Serve hot, share and enjoy the deliciousness!
