Debbies Home Cheese Fries
- 4 russet potatoes
- 1 cup plain flour, more if needed
- 12 teaspoon season salt
- 12 teaspoon garlic salt or 12 teaspoon garlic powder
- 14 teaspoon black pepper
- oil (for frying)
- 4 -6 slices bacon, cooked and crumbled
- 1 cup colby-monterey jack cheese, shredded
- 3 -4 green onions, sliced
- Clean and scrub potatoes.
- (leave skins on) Slice 1/8 inch thick.
- Place in bowl of cold water for 30 minutes or longer.
- Drain well.
- Season with season salt, garlic powder and pepper.
- Add flour and toss to coat, making sure to separate slices.
- Fry in hot oil until lightly brown.
- Drain on paper towel for a minute.
- Sprinkle with more salt.
- While hot sprinkle the cheese and bacon over the top of fries.
- Return to hot oven only until the cheese is melted.
- Sprinkle with green onions.
- Serve hot.
