Barbecued Chicken Bundles
- 8 (6-ounce) boneless skinless chicken breasts
- 8 (3/4-ounce) slices Land O Lakes Deli American, cut into quarters
- 16 slices (3/4 pound) bacon
- 1/4 cup barbecue sauce
- Heat 1 side of gas grill on medium or charcoal grill until coals are ash white.
- Place coals to 1 side in charcoal grill.
- Make aluminum foil drip pan; place opposite hot coals.
- Make slit in each chicken breast half to form pocket.
- Place 4 pieces cheese into each pocket.
- Roll each chicken breast into bundle; wrap crisscross with 2 slices bacon.
- Secure bacon with toothpicks.
- Place bundles on grill over drip pan.
- Grill, turning every 15 minutes and brushing with barbecue sauce during last 10 minutes, 30-40 minutes or until internal temperature of chicken reaches at least 165F and juices run clear when pierced with a fork.
- (If crisp bacon is desired, place bundles over direct heat, turning 2 to 3 times, during last 10 minutes.)
- Oven Directions: Heat oven to 400F.
- Prepare bundles as directed above (if crisp bacon is desired, precook bacon until half done).
- Place bundles on broiler pan, bottom-side up.
- Bake for 30 minutes; turn.
- Brush with barbecue sauce.
- Continue baking 20-30 minutes or until internal temperature of chicken reaches at least 165F and juices run clear when pierced with a fork.
