Ukrainian Pickled Red Peppers
- 9 cups water
- 6 cups brown sugar
- 3 cups vinegar
- 3 tbsp. coarse salt
- 2 tbsp. allspice tied in a cheesecloth
- 2 qt. red peppers (about)
- Cook all above to a boil.
- Clean and slice about 2 quarts more or less of nice fat red peppers.
- Put them in the syrup for a few minutes to soften.
- Stuff peppers into sterilized jars.
- You may add a few dry hot peppers and garlic to the peppers if you so desire.
- Fill jars with the syrup nearly to the top, add 1 or 2 tablespoons of olive oil, Seal jars but not tightly.
- Put jars in a water bath and cook them for about 10 minutes.
- Take jars out of hot water bath and seal them tightly.
- Stand the jars upside down till they cool.
- Keep jars in a cool place.
