Java Rica

  1. Melt the gelatin in a bowl of water over a pan of simmering water.
  2. Remove from heat.
  3. When cool and beginning to thicken, add sugar, coffee and liqueur.
  4. Whisk the cream until soft.
  5. Gradually add the coffee mixture to the cream.
  6. Continue whisking until the cream is thick and beginning to set.
  7. Pour into serving glasses and chill for 2-3 hours.
  8. Just before serving decorate each with a crystallized violet or some other garnish.
