Java Rica
- 2 tablespoons gelatin powder (1/2 oz)
- 4 tablespoons water
- 2 tablespoons sugar
- 13 cup strong black italian coffee (espresso or strong coffee with a little instant added)
- 14 coffee liqueur
- 1 14 cups heavy cream
- crystallized violets (optional, or some other lovely garnish)
- Melt the gelatin in a bowl of water over a pan of simmering water.
- Remove from heat.
- When cool and beginning to thicken, add sugar, coffee and liqueur.
- Whisk the cream until soft.
- Gradually add the coffee mixture to the cream.
- Continue whisking until the cream is thick and beginning to set.
- Pour into serving glasses and chill for 2-3 hours.
- Just before serving decorate each with a crystallized violet or some other garnish.
