Allegheny Baked Marsh Hare Recipe

  1. Soak muskrat in water to cover, with 1 Tbsp.
  2. salt per qt of water, overnight.
  3. Cook potatoes and mash with butter, 1/2 Tbsp.
  4. salt, 1/4 tsp.
  5. pepper, the savory and celery.
  6. Stuff muskrat with potato stuffing, and sew up or possibly truss.
  7. Rub with 1 tsp.
  8. salt and 1/8 tsp.
  9. pepper.
  10. Put on a rack in roaster, with legs tied to body.
  11. Arrange carrot quarters around the muskrat and the bacon on top.
  12. Bake at 400 degrees for 10 min.
  13. Pour 2 c. warm water over the meat and cook an additional 35 min.
  14. Remove bacon and cook for 10 min more.
  15. This recipe yields 2 to 4 servings.
