Murgh Phalhar Salad - Chicken salad with honey and mint dressing
- 12 kg chicken, boiled and shredded
- 1 cup pineapple, diced
- 1 red bell pepper, sliced
- 2 spring onions, sliced
- 2 tablespoons olive oil
- 4 tablespoons orange juice
- 1 teaspoon honey
- 2 mint leaves, chopped
- 12 teaspoon salt
- 14 teaspoon mustard powder
- 14 teaspoon black pepper
- 12 cup heavy cream
- 5 olives
- 2 oranges
- Peel the oranges and remove the pith and seeds from the segments.
- Blend all the ingredients for the dressing in a food processor or liquidiser.
- Place all the ingredients for the salad in a bowl.
- Add the dressing.
- Mix well.
- Arrange the salad on a flat dish.
- Garnish with the olives and orange segments.
- Serve!
