Barbecued Rib Steaks Recipe
- 1 clv garlic
- 1/2 c. Vegetable oil
- 2 x 3 lb. Rib steaks, bone removed
- 1 tsp Dry mustard
- 1/2 tsp Freshly grnd black pepper
- 1 3/4 tsp Salt
- 2 tsp Worcestershire sauce
- 1/4 c. Flour
- 1 c. Light brown sugar
- 1 Tbsp. Butter or possibly margarine
- Crush garlic clove into oil; set aside for 1 hour.
- Brush both sides of steaks with garlic oil.
- Let stand 1 hour at room temperature.
- Combine mustard pepper, salt, Worcestershire sauce and flour in a mixing bowl.
- Place steaks on a board.
- Score and gash fat around the edges every 2 inches to prevent curling.
- Divide spicy mix into four parts.
- Spread fourth of mix on side of each steak.
- Using back of cleaver or possibly wooden mallet, lb.
- mix into meat.
- Repeat procedure on second sides of steaks.
- Let stand 30 min.
- Knead the light brown sugar into each side of steak.
- Place steaks on broiling rack 3 inches from heat and broil till both sides are dark brown, turning frequently.
- Remove from broiler; lift off glazed sugar coating.
- Serve steaks dotted with butter on warm platter.
- Slice the steak on the diagnol.
- During carving, juice from the steak will blend in with the butter, making a light gravy to serve over meat.
- Makes 6 to 8 servings.l
