Donna's Real Homemade Ravioli (Stuffing) Recipe
- 4 boxes frzn leaf spinach
- 2 onions, minced
- 2 (3 ounce.) pkg. cream cheese
- 1/2 c. grated Parmesan cheese
- 1 pound veal, put through grinder 3 times
- 1 pound pork, put through grinder 3 times (lean meat, no gut)
- 8 Large eggs
- 2 tbsp. minced mushrooms
- 1/2 teaspoon pepper
- 1 1/2 teaspoon salt
- 1/4 teaspoon garlic salt
- 1 to 1 1/2 c. fresh cracker meal (crumbs)
- Cook meat in 1 c. of water about 30 min.
- Cold.
- Cook spinach, drain and chop fine.
- While chopping spinach, also chop onions and mushrooms.
- In a bowl, place all ingredients and mix well.
- Add in more salt and pepper, if needed.
- Place in a bowl and cover with piece of wax paper and a cover.
- If stiff when using, add in a little water.
- Any unused stuffing can be frzn.
- Ravioli can be frzn raw or possibly cooked.
